Breakfast Sandwiches

It's no surprise that I love breakfast. Well, for the past few days, my co-worker has been bringing in McDonald's with her to work. McDonald's has a good concept for the breakfast sandwich, however they are just too greasy for my liking and I always feel so sick after eating there. I'd much rather make mine at home and bring it in. You could even pre-make these, toss them into the freezer and warm them up on the morning! This is how I make them:

Breakfast Sandwiches
(per sandwich)
2 pieces of toast, English muffin or bun
1 or 2 eggs (depending on how hungry you are!)
1 cheese slice
2 pieces of bacon
Butter or mayo, as desired

I cut the pieces of bacon in half and cook thoroughly. This allows you get easily get bacon in every bite. Drain excess grease from the pan. Cook the egg in the same pan to give it that nice bacon-y flavor. I suggest breaking the yolk of the egg. Fry up the egg for approximately 2 minutes, then flip. Place the cheese slice directly onto the egg and turn off the heat. This is when I will pop my toast, English muffin or bun into the toaster. The cheese will melt nicely without over cooking the egg. Spread butter or mayo on each side of the toast. Transfer the egg and cheese onto the toast. Assemble the bacon onto the cheesey egg and top with the other piece of toast.
