I love chocolate truffles. Best part is, they are super easy to make too! You could stir in some caramel, add a surprise in the middle, even top with ganache if you wanted. Below is my simple recipe for some cream cheese chocolate truffles, however, I made this recipe with my left over cream cheese and so it only made 18-20 truffles. So, feel free to double or triple the recipe!
Cream Cheese Chocolate Truffles
3 oz of cream cheese (approximate 1/3 of the brick)
1 1/4 cups of icing sugar
3/4 cup of chocolate, melted
Sugar, icing sugar or cocoa for rolling
Melt chocolate over a double boiler or microwave. If microwaving check every 30-45 seconds to ensure it does not burn. Allow to cool slightly.
Combine cream cheese and icing sugar until smooth. Add cooled chocolate and mix well. Refrigerate for approximately 30 minutes until firm. Roll into bite sized balls and then coat in sugar, icing sugar or cocoa. Keep sealed in a container in the fridge for maximum freshness. However, best served at room temperature.
Please Note: As it says above, this is a small recipe and only made approximately 18-20 truffles. Double or triple the recipe for more!
