My boyfriend wasn't having a very good night. So, I asked him what would he like me to bake for him. Anything at all. Well, obviously he loves peanut butter, so he wanted peanut butter cup... cookies! Well, I knew I'd find something online for him, so here it is:
Peanut Butter Cup Cookies
1 1/2 cups of flour
1/2 cup of cocoa powder
1/2 teaspoon of baking soda
1/2 cup of sugar
1/2 cup of brown sugar
1/2 cup of butter
1/4 cup of peanut butter
1 teaspoon of vanilla
1 egg
1/2 cup of icing sugar
1/2 cup of peanut butter
In a bowl, mix together the flour, cocoa and baking soda until blended. In another bowl, beat together both sugars (white and brown), butter and 1/4 cup of peanut butter until light and fluffy. Then combine the vanilla and egg to the sugar mixture. Mix this with your original flour mixture and set aside.*
Filling: Combine the icing sugar and 1/2 cup of peanut butter and mix well.
With floured hands, roll the filling into 1-inch balls. Flatten the cookie dough and shape over the filling balls, covering completely. Place on ungreased baking sheet.
Bake at 375°F for 7-9 minutes. Cookies are done when they are firm to touch. Place on cooling rack. Store in an air tight container.
*If you find the dough too crumbly to work with, add 1 tbsp of milk.
