Jeff had a tooth removed earlier this week, so I haven't done much cooking as he has to eat soft foods! It's been a lot of soups or eggs or plain pasta. Tonight, I wanted to give him a soft little treat to make up for the mediocre food he's been having, plus we know how much he loves peanut butter! Remember when I said I love Sally's Baking Addiction? Well, this is another recipe from her site. She does so much with this recipe to constantly change it up. This is just the plain soft peanut butter cookie recipe:
Soft Peanut Butter Cookies
1/2 cup of butter, room temperature
1/2 cup of brown sugar
1/4 cup of sugar
1 egg
3/4 cup of peanut butter
1 teaspoon of vanilla
1/2 teaspoon of baking soda
1 1/2 cup of flour
Sugar for rolling
Cream together butter and sugars. Mix in peanut butter, egg, and vanilla. Add the baking soda and flour - Do not over mix! Cool dough for at least 30 minutes. (I refrigerated mine over night)
Preheat oven to 350◦ F
Remove from fridge and roll into balls. The dough is crumbly, but rolls confirms easily enough from the heat of your hands. Roll each balls into the sugar if desired. Press lightly down with a fork. (I popped a single chocolate chip on the top of some of the cookies before baking them for a little bit of something different)
Place onto ungreased cookie sheet and bake for 8-9 minutes. Transfer to cooling sheet to firm up. Store in air tight container for freshness.
