When I get a request to make cookies at 10:00 at night, who am I to deny such a request? The problem was finding an easy enough recipe to make so late on a week night! So, I improvised. I took a typical chocolate chip cookie recipe and added some extras! Now, I also doubled this recipe which made a ton! So, I would suggest when doubling the recipe, only use 1 cup of peanut butter chips and 3 cups of the chocolate chips so it's not so overwhelming. Lastly, the cookies spread out a lot on the sheet, so leave lots of room!
Chewy Chocolate & Peanut Butter Chip Cookies
1 1/4 cup of margarine
2 cups of sugar
2 eggs
2 teaspoons of vanilla
2 cups of flour
1/4 cup of cocoa
1 teaspoon of baking soda
1/2 teaspoon of salt
1 cup of chocolate chips
1 cup of peanut butter chips
Preheat oven to 350° F. Cream together margarine and sugar until smooth. Add eggs and vanilla and combine. Blend in cocoa, baking soda and salt. Mix in flour, careful not to over mix. Fold in both kinds of chips. Bake for 8-10 minutes. Store in an air tight container for freshness.
