In Edmonton, we're currently having a "heat wave". So the want for cooking/baking very much decreases. Plus! Trying to find delicious recipes that don't involve heating the house up even more proves to be challenging as well. I find myself having to modify recipes that typically call to be in the oven, such as this one. This I found on Pinterest from The Slow Roasted Italian, but with my changes I have the recipe below:
Chicken Cheese Meatballs
1 lb of ground chicken
3/4 cup of breadcrumbs
1 cup of Parmesan cheese
3 gloves of minced garlic
1/2 small onion, chopped finely
2 tbsp of hot sauce
1 cup of shredded cheese
1 egg, beaten*
Italian seasonings
Salt
Pepper
In a large mixing bowl, mix together all ingredients until fully combined. Roll the meatballs into evenly sized balls. (I made larger ones, but feel free to make whatever size you want - just make sure they are as uniform as possible) Heat a pan with oil. Add your meatballs to the pan and cook until lightly browned all over.
I served with spaghetti and tomato sauce, but feel free to serve as an appetizer instead. - Extra cheese melted on top would make this perfect!
*If you half the recipe like I did, you will still need 1 full egg to combine the meat mixture properly.
