Making stuffing is another one of those things that I never used a recipe for. I would just eye ball it and figure when it would look and taste about right. But, that doesn't help anyone! So, I've written down the recipe for everyone to use. Now, this recipe makes a whole loaf of bread, which of course is quite a bit of stuffing, so feel free to cut the recipe in half. I know I did the last time I made it. Also, I personally prefer the crispy bits of stuffing the best. So, feel free to pop in the oven on broil for 10-15 minutes after it's cooked in the bird as well!
Stuffing
1 loaf of bread
Poultry seasoning (approximately 1 tablespoon)
1/2 cup of melted butter
1/2 cup of chicken stock
Optional: celery and onion
Rip your loaf of bread into bite sized pieces. (Stale bread works great too!)
Optional: Cook your onions and celery until tender.
Combine butter and chicken stock. (Combine with vegetables as well)
Pour over the bread in small amounts. Mix the bread with the liquid to get everything coated.
Repeat until all the liquid is used.
Top with the poultry seasoning. Mix well. Use more poultry seasoning if this does not seem like enough. You want the each piece of bread lightly covered.
Stuff into bird. (See turkey recipe for cooking time)
