Quesadillas

What's great about Quesadillas is that you can make them for each persons preference. Us for example - Jeff had his with bacon, chicken and cheese. I cooked the bacon and chicken together, but then cooked some onions and peppers for myself separately. We each made our own, then popped them into the oven for just a of couple minutes (seeing as how everything was already cooked - we just needed the cheese to melt) and that's it! Served with salsa (and sour cream if I had any left). Check out the super easy recipe below:

Quesadilla
1 tortilla shell per person
Cheese
Suggested filling:
Chicken
Bacon
Peppers
Onions
Whatever else you can think of!

Preheat oven to broil.
Cut all of your filling ingredients into bite sized pieces. Fully cook all filling ingredients.
Put your ingredients onto your tortilla shell and fold over to get the filling onto one side only. Ensure that your filling is evenly distributed onto the one side of your tortilla.
Cover with as much cheese as you like!
Fold over and place in the oven.
Bake in the oven for 3-5 minutes. Since the oven is on broil, it will melt very fast! Keep an eye on it! Ideally you'll want the tortilla to be crispy and  soft.
Cut into thirds and serve.
