Two-Bite Brownies

I finally went out and bought a mini muffin pan. I shall use it all the time, I swear! If not just for these two-bite brownies, then nothing else! These are from Martha Stewart's website. So feel free to put these in a regular brownie pan instead of the mini muffin pan (however, if you do this, you will need to cook them for approximately  30-35 minutes instead). This is the recipe:

Two-Bite Brownies
6 Tablespoons of butter
1/2 cup of chocolate chips
1/4 cup of powdered cocoa
3/4 cup of flour
1/4 teaspoon of baking powder
1/2 teaspoon of salt
1 cup of sugar
2 eggs
2 teaspoons of vanilla

Preheat oven to 350°
Grease the mini muffin pan well (or the baking pan). Put butter, chocolate chips and cocoa in a microwave safe bowl. Mix at 30 second intervals to prevent burning; heat until metled. Set aside to cool.
Combine flour, baking powder and salt in a separate bowl and set aside also.
Mix sugar, eggs and vanilla together in a bowl (I suggest using an electric mixer as it gets very thick). Add in the chocolate mixture and combine well.
Pour batter in prepared pan. Cook for 15 minutes or until a a toothpick comes out clean. Allow to cool in pan for at least 15 minutes, then remove and transfer to a cooling rack. Store in an air tight container.
