Jambalaya

We had a very emotional day. One of our cats had to be taken to the emergency vet clinic due to an abscess under his chin. Thankfully, he is doing just fine now. Poor thing needs to wear a cone though, so he doesn't reopen up the incision. So, for dinner, I really wanted some comfort food. We love spicy food in our house, so that seemed like the best idea. I decided on Jambalaya! So check out my recipe below:

Creole Seasoning
2 1/2 tablespoons of paprika
2 tablespoons of salt
2 tablespoons garlic powder
1 tablespoons of black pepper
1 tablespoons of onion powder
1 tablespoons of cayenne pepper
1 tablespoons of oregano
1 tablespoons of thyme

Jambalaya
2 chicken breasts
3 spicy sausages
1 dozen shrimp
1/2 onion
1 cup of chicken stock
Tomato Sauce
Fettuccine
(feel free to add some peppers and tomatoes if you like too!)
Cut the chicken, sausages and onion (plus any other veggies you may be using) into bite sized pieces. Peel the shrimp. Sprinkle approximately 1 - 1 1/2 tablespoons of the creole seasoning onto the meats and mix until fully covered. Cook fully.
Start the fettuccine.
Add one cup of chicken stock to the meats and cook until mostly evaporated.
Put 1/2 - 1 tablespoon of the creole seasoning into your tomato sauce. Add your tomato sauce to the meats until fully incorporated.
Serve over the fettuccine.
