Corn Fritters

I've had some corn meal mix in my pantry for some time. My plan was to make corn bread, however, I haven't gotten off my butt to find a recipe yet! Jeff suggested corn fritters, so I surprised him this evening and made some corn fritters! We've had a very busy week, so I haven't been cooking as much as I'd like. Therefore, I made us a big dinner on Saturday night. They turned out extra good after a few batches in the oil because they crisped up much more then the first couple. This recipe is from Paula Deen on Food Network and was very easy. I even cut the recipe in half and it still made a ton. It is below:

Corn Fitters
1 1/4 cups of corn meal
1 1/4 cups of flour
1/4 cup of sugar
1 teaspoon of salt
1 cup of milk
2 eggs
1/4 cup of melted butter
1 can of corn, drained
Vegetable oil for frying

Heat approximately 2 inches of oil in a dutch oven, pot, or deep fryer. You'll know when it is ready to start frying when you can drop a few drops of water and it pops back at you.
In a medium bowl, combine corn meal mix, flour, sugar and salt. Add milk and eggs. Stir well. Finally add butter and corn. Mix until thoroughly combined.
Drop by tablespoons into hot oil. Cook for 2-4 minutes per side until golden brown. Flip only once. Allow to drain onto paper towel to remove excess oil before serving.
