No Bake Oat Bars

It was so hot out today, I wanted to make something that I didn't have to turn on the oven for. But I didn't know what! Upon looking through my pantry, I decided on something with butterscotch chips. Now, my boyfriend isn't overly fond of butterscotch, so I wanted something that was sweet enough it attempted to hide the taste of the butterscotch. So, I decided on something that also used the rest of my oats I had too! The recipe is:

No Bake Oat Bars
1 1/2 cups of sugar
1/2 cup of brown sugar
1/2 cup of milk
1/2 cup of butter
1 tsp of vanilla
1 cup of butterscotch chips
3 cups of quick oats
Dash of salt








Heat together the sugars (brown and white), milk and butter over the stove until boiling. Boil for 1 minute. Remove from heat and add the vanilla, dash of salt and the butterscotch chips. Continuously stir for approximately 2 minutes. The chips will not fully melt, but that is okay! Fold in the oats until fully combined. Pour into a parchment lined Pyrex dish. Place in the fridge until cool. Then cut into bars and serve!
